Recipe of the Day: GumDrop Cookies
Gumdrop Cookie Recipe
This is an old fashioned cookie. Kids will enjoy the gumdrop pieces inside each cookie.
Yield: 4-6 dozen
Gumdrop Cookie Ingredients:
- 1 cup Shortening
 - 1 cup Granulated Sugar
 - 1 cup shredded Coconut
 - 2 cups uncooked Oatmeal
 - 1 tsp. Baking Soda
 - 1 cup Brown Sugar
 - 2 cups All-Purpose Flour
 - 2 Eggs, beaten
 - 1/2 tsp. Baking Powder
 - 1 lb. Gumdrops, cut into small pieces and floured
 
- Preheat oven to 350 degrees.
 - Lightly grease a cookie sheet.
 - Cream shortening and sugar until fluffy.
 - Add eggs.
 - In a separate bowl, mix together all dry ingredients, except coconut, gumdrops and oatmeal..
 - Mix dry ingredients into batter.
 - Add coconut, gumdrops and oatmeal.
 - Drop teaspoonful of dough onto greased cookie sheet.
 - Bake for 10-12 minutes, until edges of cookie are brown.
 - Remove cookies and place on a wire rack to cool.
